White Chocolate Raspberry Tiramisu Parfait with Donut Sticks

Say hello to springtime with our White Chocolate Raspberry Tiramisu Parfait! Featuring Fieldstone Bakery Donut Sticks layered with creamy mascarpone filling, raspberry jam, fresh raspberries, and shaved white chocolate, these parfaits deliver the fresh flavors of spring in a convenient, single-serve portion. Perfect for dessert menus in school cafeterias, hospitals, senior care facilities, and more!

Ingredients (per serving):

  • 4 Fieldstone Bakery Donut Sticks, cut into small squares
  • Raspberry lemonade (for dipping the Donut Sticks into)
  • ¼ cup raspberry jam 
  • ½ cup fresh raspberries (plus extra for garnish)
  • ⅓ cup prepared mascarpone filling (see below for instructions) or store-bought cream cheese-based tiramisu filling
  • 2 oz white chocolate, shaved (for garnish)

Instructions:

  1. Prepare the Donut Sticks: Dip the donut stick pieces into raspberry lemonade briefly, coating evenly without soaking them completely.
  2. Layer the Parfaits: In each parfait dish, start with a bottom layer of raspberry lemonade-dipped donut stick pieces.
  3. Add Filling and Jam: Spoon a layer of the prepared mascarpone or cream cheese filling over the donut sticks. Spread a thin layer of raspberry jam over the cheese filling and scatter fresh raspberries on top.
  4. Repeat Layering: Add another generous layer of raspberry-dipped donut sticks and mascarpone or cream cheese filling on top of the jam and raspberries. Continue until your serving dish is full.
  5. Final Garnish: Garnish each parfait with additional fresh raspberries. Finish by shaving white chocolate generously over the top.
  6. Chill and Serve: Refrigerate the parfaits for at least an hour to let the flavors meld, then serve chilled.

Make Your Own Mascarpone Filling:

  • 8 oz mascarpone cheese (room temperature)
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 oz white chocolate (melted and cooled slightly)

Prepare the Filling:

  1. Using a stand mixer or handheld beater, whip the whipping cream until stiff peaks form.
  2. In a separate bowl, combine the mascarpone cheese, powdered sugar, and vanilla until smooth. 
  3. Fold the whipped cream into the mascarpone mixture.
  4. Melt the white chocolate in a microwave safe bowl on half power. Pause every 30 seconds to check on the chocolate and to stir it. 
  5. Let the melted chocolate cool slightly. 
  6. Incorporate the chocolate into the mascarpone and whipped cream mixture.
