Berries & Cream Brownie Tower

There are few food pairings more decadent than chocolate and strawberries. When you add cream cheese frosting and Fieldstone Bakery Fudge Brownies, it becomes even more irresistible! If you’re looking for a delicious and rich dessert to serve at your spring or summertime celebrations, our Berries & Cream Brownie Tower is the recipe for you. Simple to make and beautiful for serving, these brownie towers are chocolatey, fruity and fabulous. 

Ingredients/Special Tools

  • Fieldstone® Bakery Fudge Brownies
  • 1 Package Fresh Strawberries
  • 2 cups Powdered Sugar
  • 12 ounces Room Temperature Cream Cheese
  • Strawberry Purée or Strawberry Jam
  • Large Chocolate Bar (for shavings)
  • Piping Bag and Decoration Tip

Prep

  1. In a large mixing bowl, combine the room-temperature cream cheese and powdered sugar gradually, ensuring thorough mixing.
  2. Once the powdered sugar is fully incorporated, add the strawberry jam one tablespoon at a time until well blended.
  3. Refrigerate the mixture to allow it to stiffen.
  4. Meanwhile, prepare the strawberries by slicing them into small discs and then halving them to create semi-circle shapes.
  5. Additionally, slice several strawberries into quarters to use as garnish.
  6. For chocolate shavings, use a vegetable peeler to shave the edge of a chocolate bar until you achieve your desired amount.


Assembly

  1. Remove the chilled strawberry cream cheese filling from the fridge and transfer it to an icing bag.
  2. Pipe a row of filling along one short edge of a brownie, creating a continuous line of dollops.
  3. Arrange 3-4 cut strawberry semi circles next to this row of filling.
  4. Repeat the process by piping another row of filling beside the strawberries, followed by another row of strawberries.
  5. Place the second brownie on top.
  6. Pipe a row of filling dollops down the center of the top brownie.
  7. Decorate with the quartered strawberries and chocolate shavings on top.
